Skip the canned or boxed broth from the grocery store…truth be told….the FLAVOR is SO much better; I know you will agree! So next time you have a rotisserie chicken carcass….KEEP IT!
- 8 c water (per rotisserie carcass)
- 1 tablespoon sea salt
- 2 bay leaves
- 2 tablespoons apple cider vinegar
- 2 large onions, unpeeled and coarsely chopped
- 2 carrots with tops, chopped
- 3 celery stalks, coarsely chopped
- Handful of fresh parsley and thyme (or dried)
- 4 garlic cloves
- 1 rotisserie chicken carcass
- 2 tablespoons apple cider vinegar
Place all ingredients in a large slow cooker on low for 18-24 hours. The longer it cooks, the better it tastes! Afterwards, cool and strain the stock through a fine mesh strainer or into a large bowl, and transfer into mason jars for storage, and discard the waste.
