This is currently our family’s favorite meal! It pleases parents, young adults, and teens alike. It is flavorful and contains numerous hidden veggies! I quadruple the recipe to ensure leftovers for lunches. Enjoy!
Ingredients:
Avocado oil (I use avocado oil spray)
1 lb chicken sausage (I find mine at Sprouts) or Italian sausage
3 cloves garlic (try Trader Joe’s frozen cubes for ease)
1/2 onion chopped
1/2 bell pepper chopped
1/2 cup pureed carrots
1/2 zucchini chopped
2 cups fresh spinach, chopped
2 cans of diced tomatoes
1 tsp dried oregano
1 tsp dried basil
1 tsp parsley
1 tsp sea salt or Himalayan salt
1/2 tsp ground black pepper
Instructions:
Preheat oven to 450
Heat oil in cast iron skillet (I use 2 skillets to quadruple the recipe, 2 lbs sausage in each pan)
Add garlic, bell pepper and onion and cook until wilted
Add sausage, cook, breaking it up until browned
Add zucchini, tomatoes and spinach and stir until wilted
Add seasonings
Transfer skillet(s) to oven an bake for 12 minutes
Serve with your favorite toppings. I serve with avocado, but you could also offer cheese and sour cream.
