Minestrone Soup
2 tbsp. butter
4 cloves of garlic
2 carrots
1 onion
1 celery
1 zucchini
1-2 potatoes
3/4 of a small can of tomato paste
3 cans vegetable stock
2 cans of chicken stock
2 tsp. oregano
3 tbsp of parsley
1 1/2 tsp. basil
1/4 tsp black pepper
1/4 tsp salt
1 can diced tomatoes
1/2 c. small pasta
Melt butter in large pot.
Add garlic, carrots, onion, celery. Cover and wilt veggies for 10 minutes on medium heat. Add zucchini, potato, stocks, tomato paste. Bring to a boil.
Reduce heat, add parsley, oregano, basil, pepper and salt.
Simmer over medium heat for 15 minutes.
Add tomatoes and pasta, and simmer for 10 minutes.
Optional: Serve with oyster crackers.
