(Doubled recipe: keep half in the freezer):
Ingredients:
6 cups shredded potatoes
2 T butter melted
1/4 tsp pepper and salt
12 pre-cooked turkey or chicken sausage
12 eggs
Veggies optional
Spray muffin tins
Combine:
6 cups shredded potatoes
2 T melted butter
1/4 tsp pepper and salt
Spoon potato combination into muffin cups
Bake at 400 for 12 mins
Remove
While cooking, cut up 12 sausage links into small slices and place slices on top of potatoes in cups evenly
Whisk 12 eggs (add optional cheese, mushrooms, onions, red peppers, spinach)
Pour eggs into cups
Bake at 400 for 15 mins
Makes 24 muffins….ENJOY!
